Hotel restaurants in Barcelona usually play it safe — tasteful but forgettable. Somni, inside The One on Provença, is the exception. Chef Miguel Muñoz has built his identity around an unlikely obsession: the cannelloni. Not the leaden tubes of Christmas tradition, but a full reinvention — the pasta shell reimagined — sometimes it's cured ham, sometimes a leaf, sometimes rice, stuffed with everything from oxtail and truffle to txangurro in squid ink. It sounds gimmicky; it isn't. The technique is precise, the flavours layered and serious. Beyond cannelloni, the Mediterranean menu delivers: blue lobster in avocado with coconut, turbot with Vizcaína sauce, octopus over potato purée. Jaime Beristain's interior is warm without the usual five-star stiffness. The weekly lunch at €28 is quietly one of Eixample's best deals.
