Fismuler was founded by three friends — Nino Redruello, Patxi Zumarraga, and Jaime Santianes — who met in the kitchen at El Bulli under Ferran Adrià. Sixteen collective years in multi-starred rooms, then this: a daily-changing, product-driven restaurant on Carrer de Manso where the El Bulli pedigree shows in technique but never in pretense. The signature cheesecake — built with Idiazabal, gorgonzola and fresh cheese — looks more like a ripe wedge of soft cheese than a piece of pâtisserie, and eats like a dare that pays off. Cured beef with pickled radish on sourdough, navalles with kimchi dressing, gamba omelette dusted with tomato powder: a card that's quietly inventive without announcing itself. All plates in half and full sizes. Wine list is Spanish-only, glasses from 3€. Average 40–50€. Minimalist service means the team lets the food speak — names only, details on request — which means you'll miss interesting details if you don't. A wolf in trendy sheep's clothing, as one line inside the kitchen's own circle put it.
