SCAPAR earned its first Michelin star in the 2026 guide — remarkable for a restaurant that only opened in June 2024. Chef Koichi Kuwabara, formerly head chef at Dos Palillos, seats just twelve diners at a counter and delivers a sixteen-course surprise omakase for 140 euros. The name reflects the sense of escape from the stresses of daily life. The cooking fuses Japanese kaiseki rituals with Catalan and Spanish ingredients and occasional nods to French technique. Particular standouts include the sea game — a cut of tuna presented like meat, served with ramen reduction — and the soy milk pudding with vanilla, yuba, and grapefruit. Kuwabara explains the provenance of each ingredient as he cooks. Intimate, time-bound, and radically honest. One of the most compelling new openings in Barcelona — the kind of restaurant that earned its star not by chasing one, but by doing something genuinely its own.
