Daniel Benito — veteran of Gresca, Gaig and Mont Bar — distilled a lifetime of fine-dining technique into a counter with four ramen and nothing else. It works. The broths land somewhere between Tokyo orthodoxy and Southeast Asian swagger: a laksa-curry ramen that walks the line between coconut richness and Japanese restraint, a tan tan with proper sesame depth, a vegan bowl that doesn't feel like a consolation prize. The menu rotates with the seasons — lighter, brighter in summer; richer in winter. No reservations, so you queue at the door; lunch turns over fast. About €15 gets you fed. Easily the most interesting contemporary ramen in the city, and the reason Benito just opened a second shop in Gràcia.
