Six seats. A chef who wakes at five in the morning to forage herbs in the mountains. Handmade tableware. Ona is the most radically intimate dining experience in Barcelona, and possibly the most philosophically committed. Australian-born chef Jack Tonkin — previously at Berlin's nine-seat Ernst — prepares fifteen- to twenty-course tasting menus built entirely from organic Catalan produce, foraged ingredients and regeneratively farmed products. This isn't a restaurant with a sustainability page on its website; it's a chef who physically walks the supply chain every morning before he cooks. Services run Friday and Saturday nights only, with private dinners available on additional dates. The hyper-seasonal approach means no two meals are alike. The price reflects both the sourcing philosophy and the intimacy. Book well in advance — six seats disappear fast.
