Japanese Tonkotsu Ramen · Eixample, Barcelona · €€

Awards: Repsol Solete

Open since 2019

Eighteen-hour pork-bone broth and hand-made noodles drive a tight tonkotsu menu — an Eixample ramen-ya from a Japanese chain with London branches. Repsol Solete in 2021; a cold gazpacho ramen surfaces every summer.

The Delekta Review

Five broths on the ramen menu — tonkotsu, tonkotsu X, paitan, miso, vegetarian — but tonkotsu is the headline. Pork bones simmered eighteen hours; noodles made in-house; firmness chosen at the order (soft, medium, al dente, extra hard).

Japanese-run ramen counter in Eixample — tight, efficient, the focus on the bowl.

Tonkotsu (the headline) comes with chashu pork, nori, scallion, and mushrooms; paitan chicken runs lighter. A cold ramen-gazpacho appears every summer: gazpacho base spiked with a soy-based sauce, plus cherry tomatoes, tender onion, egg, and sesame. Sides include gyozas, edamame, chicken karaage with yuzu mayo, and marinated eggplant; lunch combos sit around €12–14.

Small Eixample counter, often queued at peak — book ahead via the website.
