Imported from Fukuoka via London, Kanada-Ya doesn't do variations on a theme — it commits to one theme with obsessive focus. The tonkotsu is the real thing: eighteen hours of pork bones reduced to an opaque, collagen-thick broth that coats the spoon. Noodles are hand-pulled, firm, held up to the broth's weight. The Paitan chicken is a lighter sibling for those who find tonkotsu heavy, and the char siu is properly fatty. Small room, often queued at peak hours — reservations help. Service can stumble, portions aren't Tokyo-huge, and it's one of the pricier ramen in the city, but when the bowl hits the counter you understand why people came in from the cold for it.
