Lombo earns its place by force of obsession. Eugeni de Diego and Ana Alvarado — both ex-elBulli — opened it as a tribute to Italian cooking with no flash and no shortcuts. Pasta is made by hand every day; the two dried pasta varieties on the menu were selected after testing seventy commercial brands. Gnocchi arrive light and spongy over butter and sage; the truffled pasta in season is the clearest payoff of that discipline. The carbonara holds to the original. The burrata salad and the tagliata are surer plays than the porcheta bikini on sweet brioche. Lunch lands at around 45 € a head, which the no-frills room doesn't telegraph. Service is more formal than warm — but the kitchen's precision is the real reason to make the trip up to Sarrià.
