Up in the old village of Sarrià, Bar Tomás has been frying potatoes since 1964, and the argument that it serves Barcelona's best patates braves has been running nearly as long. The potatoes are Prades Kenebec — a specific variety, chosen deliberately — fried twice in olive oil until the outside turns brittle-crisp and the inside stays floury, then topped with a garlicky, allioli-leaning sauce that's closer to aioli than to the harsh tomato-and-hot-sauce register most bars default to. A ració costs 2,40€. That's it. That's the pitch. The bar packs at weekend dinars — the serious queue tends to form around two — so the smart play is weekday mid-afternoon. Cash only, no frills, no reinvention in sixty years and none coming. The surrounding village atmosphere of Sarrià adds a small village calm that the rest of the city hasn't preserved. A bar that does one thing perfectly, and has done it long enough that the thing belongs to it.
