Hisop has held its Michelin star since 2007 — one of Barcelona's longest-running starred restaurants at this level. Chef Oriol Ivern works from a small room of about thirty seats on Passatge de Marimon in Gràcia, and the name itself — hyssop, a Mediterranean herb — signals the cooking's roots. The tasting menu runs €75-95 for eight to ten courses of creative Mediterranean cuisine that rotates with the seasons. There are no permanent signatures because the menu is the season. Ivern's style is minimalist and refined — inventive preparations of local vegetables, pigeon and fish with unexpected textures, plated with restraint. It's frequently described as one of Barcelona's best-kept secrets, lacking the tourist buzz of flashier spots but earning fierce loyalty from those who find it. Strong value for a Michelin star.
