Bar Milagros pulls off the full bistro ceremony — white linen, white jackets, a grand mirror behind the bar — without pricing the neighbourhood out, which was exactly co-owner Llorenç Balagué's premise from the start. Chef Javier Álvarez earns it: the cigrons amb calamarsets is the dish to order first, chickpea and baby squid finding each other with uncommon elegance. The caneló de festa major, finished tableside and lifted with truffle in season, is the kind of showpiece that justifies the room's formality. The rap amb salsa maître d'hôtel — drawn from the owner's grandmother's recipe — anchors the menu in something personal rather than fashionable. Croquetes de gambes are excellent; a display case lets you pick your own fish and shellfish. The room is a Sant Gervasi locals' scene, always full at lunch and entirely uninterested in walk-ins — reserve.
