Raw tuna with butternut squash, almond purée vinaigrette, and crushed roasted almonds. Iberian pork loin with razor clams and white grapefruit. Hanger steak with pickled carrot and coriander — described as a banh mi without the bun. Sea bass sautéed with braised romaine and beurre blanc. Chicken liver with romesco sauce and dried fruit.
