Rice specialists out of Valencia who brought the real thing to Les Corts. traditional paella, arròs al forn, fideuà, arròs negre — all cooked with care with the proper socarrat crust at the base of the pan. The paella marinera and the arròs amb conill are the plates to trust first. Weekends are full of Catalan families settling in for long Saturday lunches; book ahead or don't bother walking in. The Carrer de Bordeus original is the one that matters — newer branches exist, but this is where the technique still feels Valencian rather than Barcelonès. Quite possibly the most serious rice cooking in the city outside the Barceloneta belt, and the Valencians running the place know the tradition from the inside in a way very few Barcelona kitchens can claim.
