Head chef Tomás de la Paz runs Acurio's formula with real conviction — Mediterranean product filtered through Peruvian technique, and the results land hard. The classic ceviche, built on Castelló prawns and a leche de tigre laced with Normandy oyster, is intense and deep in a way that sticks. The shaomai stuffed with northern Peruvian chupe, Iberian pork, and eel is the kind of dish that makes you question why ceviches get all the attention. The ají de gallina croquettes are addictive — order them early. Pisco sours, classic or mango, are non-negotiable. The room is warm, colourful, and packed at Saturday lunch — bar seats overlook the cold-prep kitchen, and the staff know the lore. At around €60 a head, sourcing line-caught wild fish over farmed or trawled justifies the price. The tres leches defies expectations: the kind of dessert you never finish, except here you do.
