Pablo Ortega has spent two decades cooking Peruvian food at the highest levels, and Mercado Central feels like the distillation of everything he has learned. Built around a central bar where ceviches are prepared in real time — no barriers, echoing 1990s Lima markets — the range is staggering: over ten varieties, from the classic apaltado with corvina and avocado to the carretillero, a street-cart punch of garlic, ginger, and chili. Beyond ceviche, the kitchen delivers lomo saltado, genuinely crispy chi jau kay fried chicken, and a seco de rape swapping beef for local monkfish. Pisco drives the cocktails. At around 40 euros a head, this is not tourist-trap Peruvian — it is the real thing.
