Three former Gresca chefs walked away from one of Barcelona's most respected kitchens to open a tiny Eixample bar with a robata grill and an all-Catalan natural wine list. The result is Suru Bar, and it's one of the most exciting things happening in the city right now. The cooking is where the Japanese obsession with texture meets Catalan product: tangy, citrusy shichimi-infused chicken hearts, crunchy chicken skin topped with smooth shrimp tartare, pork ear and chicken gizzard yakitori, plus more conventional Catalan-Japanese preparations coming off the binchōtan. The natural wine list — more than 100 labels, almost all from small Catalan producers — is what turns a great meal into a memorable evening. The counter seats facing the robata are the place to be; you'll smell the charcoal and watch every plate come together. Fair warning: smoke fills the small space, and the bill climbs fast when the wines are this interesting. 50Best Discovery recognition arrived quickly — the secret is very much out.
