La Balabusta on Carrer d'Enric Granados is Israeli chef Ronit Stern's Eixample project — Sephardic and North African flavours applied to Catalan Mediterranean produce, with a kitchen layout that deliberately puts the cooking in full view and smell. The hummus is creamy, dense, correctly tahini-heavy; the shakshuka arrives bubbling in its pan with bread for dredging; the sabich, the grilled aubergine, the lamb kofte and the shareable mezze plates anchor a menu that reads long without feeling padded. Portions are generous, spicing is assertive without being showy, and the wine list leans toward producers working organically or biodynamically. The room fills — which is both its charm and its cost: on a busy night the noise climbs, service slows, and the wait for a table without a booking can be punishing.
