Mae earned its first Michelin star in 2025 — the culmination of what three friends put together in the former premises of Freixa Tradició in the Eixample. Chefs Germán Espinosa (Spanish) and Diego Mondragón (Colombian), with manager Mariella Rodríguez (Costa Rican), call their philosophy sincretisme: the deliberate fusion of Mediterranean and Latin American flavours, anchored by technique rather than novelty. Two tasting menus — Menu Mae at 95€ and Menu Gran Mae at 130€. The plating is genuinely cinematic; nearly every course is built for the photograph, but the substance holds up underneath the styling. The Latin-American / Catalan crossover that sinks most fusion projects works here because both traditions are represented by people who actually grew up eating them. Prices rose sharply post-star (from 65€ to 95€), which is the cost of recognition in this city now. Currently one of the hottest reservations in Barcelona — and, rarely for a star this new, one that earns the hype.
