Madre Lievito has been refining the same sourdough starter for over a decade, and the discipline shows: Roman-milled organic flour, two-phase fermentation, ninety seconds in a 500°C wood oven. The cornicione puffs up airy and faintly wheaty, the base stays tender without turning soggy under San Marzano. The Genovesa - smoked mozzarella and slow-cooked beef - took the jury prize at Pizzas Fest 2024, but the marinara remains the real litmus test: garlic, oregano, tomato, no cheese, nowhere to hide. Service is Neapolitan-fast, sometimes abrupt; pies land in minutes. The Mallorca branch is the Eixample workhorse, well-placed between Passeig de Gràcia and Sagrada Família.
