Neapolitan pizza on Carrer de València from a serious wood-fired oven, in an industrial, New York-warehouse aesthetic that gives the room a buzzy energy. AVPN-informed long fermentation, proper San Marzano tomatoes, fior di latte, confident charring around the cornicione — the basics done the way the purists want them done. Big pies, real essenza, a queue at peak hours that tells you most of what you need to know. Multiple Barcelona locations now, but the original Eixample spot has kept the most character and the loudest atmosphere. For Neapolitan pizza purists in this city, Grosso and Sartoria Panatieri are the two names that matter; which you prefer says more about the crowd you want to eat with than the dough.
