Gilles Brown, the Briton behind Mosquito and Red Ant, applies the same obsessive-quality approach to ramen: eighteen-hour broths, noodles made in-house with kansui to mimic the mineral profile of Japanese water, and a menu that respects the three canonical broths — shio, shoyu, miso — without trying to reinvent them. Fifteen seats on a medieval square tucked behind Via Laietana, a long wooden counter, Japanese craft beers and sake lined up behind the cook. The gyoza are widely considered the best in Barcelona — crisp-bottomed, juicy, with a dipping sauce that's dangerously good on its own. No reservations, so arrive early or accept the wait. Lunch moves fastest. The kind of place that rewards regulars and makes first-timers into them.
