Three young chefs from three different countries — Francesca Baixas (Catalonia), Gianmarco Greci (Venezuela), Joshua McCarty (California) — came together in an Eixample corner with arched brick ceilings to do something that sounds simple until you try it: contemporary Catalan cooking without the scripts and without the corsets. The team has famously refused to post finished dishes on Instagram because, as they put it, society has become one that eats with its eyes rather than its mouth. The kind of conviction that's rare in a city drowning in food photography, and the cooking backs it up. The menu changes often, leans on what the market delivers, and treats tradition as a starting point rather than a destination — crema de calçot arrives with a miso that shouldn't work and does, a pigeon dish borrows Venezuelan aromatics that fit like they've always belonged. Lunch menu at €28 is exceptional value; dinner runs about €55. For a restaurant generating this level of critical buzz, those prices are remarkably fair.
