David Morera's Deliri lives up to its name — there's a joyful delirium to the cooking that never loses its footing in sound technique. The Coure-trained chef works without a fixed tasting menu, preferring daily specials and an almost-permanent rice dish that let quality ingredients lead. Chicken croquettes arrive elevated with rustido, chipotle, and oyster sauce; mackerel pairs with flame-roasted escalivada and tapenade; tuna escabeche takes a Japanese detour through dashi and mirin. The three-meat cannelloni with custom crepe wrapper and roasting jus is Catalan comfort at its most refined.
