Colmado Wilmot opened 2023 into a neighbourhood that needed it and has been turning away walk-ins since. The kitchen's logic is produce first: red Mediterranean prawns, baby scallops grilled with garlic and salt, a fricandó of beef with sea cucumber that delivers depth no foam can fake. The peeled tomato salad with capers is a clear winner. Service can run chaotic — wine sometimes lands after the starters, early visits flagged lukewarm meatballs and limp txistorra — but the bookings hold. The room (small marble tables, glass-fronted refrigerators, hanging chorizos in blue light) is a selling point, and cortados from El Magnífico close the meal well. Chef Eugeni de Diego, ex-elBulli, has since opened a cervecería on Diagonal; the original on Calvet remains the one worth reserving.
