Sihuay's stated approach: 60% tradition, 40% modern technique — Peruvian cuisine spanning coast, jungle, and mountain across the menu. Tasting menu around €45; three-section dining room (main floor, bar, upper floor).

Chef Roberto Sihuay (later opened Macambo in 2025); Juan Otivo runs the ceviche bar (ex-Astrid y Gastón Madrid); Daniel Polo handles cocktails (ex-Tanta); Álex Luna manages the room.

Four ceviches anchor the menu; tiraditos, causa with langostinos and yellow aji aioli, beef anticucho with huancaína. Lomo saltado, ají de gallina (with del Prat chicken), tacu tacu with boneless duck, duck with pepián, tamal de presa ibérica. Suspiro Limeño, lucuma ice cream, lemon meringue pie; pisco sour cocktails come in 'cardenal' size.
