Âme — "soul" in French — is chef Pachi Rodríguez's 12-seat restaurant in the Eixample, opened at the end of 2023 and Michelin-selected almost immediately. Rodríguez arrives by an unusual route: Bolivian-born, Venezuelan-raised, a chemistry degree from Earlham College before switching careers after a summer in Paris and training at EUHT Sant Pol. The scientific background shows in the precision on the plate. Two menus, a short at €78 and the Epicure at €98 over roughly ten courses. The cooking leans French with skilful Japanese ingredient use — the crêpe de mar with Palamós red prawn pil-pil and the arroz caldoso with Ebro Delta rice, duck confit, and El Prat artichokes are standouts. The wine list is natural-leaning, mixing Spanish and French selections. At 12 seats, the chef is also the server — every course arrives with his own explanation, which turns a tasting menu into a conversation. Critics compare it to established starred restaurants. A chemist who became a chef: the curiosity lands on every plate.
