Zafra trained under the Adrià brothers and the lineage shows — brioche toasts with butter and caviar arrive as a statement of intent, and the ElBulli-style shrimp carpaccio confirms the kitchen knows exactly where it came from. Oysters and caviar are the declared obsessions, but Santa Pau beans with ibérico pancetta and canelones de centolla anchor the menu in Catalan tradition without sentiment. At the entrance, La Burguersía runs a 100g wagyu patty on potato brioche with cheddar and jalapeños for €24 — a deliberate move to casualize the room without softening the main event. The private dining space handles the celebrity circuit — it has seen some remarkable evenings — but the identity doesn't depend on it. The room earns its grandeur; the cooking earns the room.
