Carlos Salvador trained at Mugaritz, Alkimia, and Gresca, then opened a neighbourhood lunch spot in Sarrià — and the gap between those two facts is exactly what makes Amaica worth the trip. The menú del día runs €14.20 and earns every cent: a potato milhojas with curry-turmeric sauce that stays light where it could easily be leaden, a salmon fillet paired with dill and leek in a way that reads unmistakably Nordic, and a chocolate mousse cooked briefly in a water bath so the edges set into a distinct texture while the interior stays ethereally light. That mousse alone justifies the detour. Salvador's restraint is the whole point; nothing on the plate announces how much he knows, it just delivers. Repsol Solete recognised; à la carte hovers around €20. By 1pm on a busy day the mains are gone — arrive early, or accept whatever's left and trust the man.
