Lasarte at the Monument Hotel was the first restaurant in Barcelona to earn three Michelin stars, in 2017 — and it holds them with the quiet confidence of an establishment that doesn't need to chase trends. Chef Paolo Casagrande runs the kitchen under the direction of Martín Berasategui, the Basque chef who holds more Michelin stars than anyone in Spain. The result is a fantastically Catalan take on Berasategui's Basque haute cuisine with a more Mediterranean feel. The Monument Hotel setting on Passeig de Gràcia is formally elegant — Oscar Tusquets interiors, natural light, oak. The cooking is precise and refined rather than theatrical: the anti-Disfrutar, in the best sense. Some diners find the meal could use more editing — a few courses feel like padding — but the technical ceiling is very high and service is impeccable. The Passeig de Gràcia address means you're paying the highest premium possible for the highest possible standard. If Disfrutar is the exciting date, Lasarte is the distinguished dinner — less Instagrammable, arguably more technically accomplished.
