Pica pica snacks: gordal olive with brine gel; coca bread with dehydrated tomato, bellota ham, and olive oil pearls; fresh clams with smoked paprika and vinegar. Ajoblanco with tomato ice, melon, and almonds. Palamós prawns al ajillo. Line-caught dentón in smoked broth with pickled red onions and potato. Squab two ways — seared breast with red-wine-poached pear and forest fruits; roasted thighs with spelt risotto.
