Xerta's identity is fixed and unapologetic — everything routes back to the Ebro Delta. Galeres, arrossos, and peix de llotja anchor all three tasting menus, and the rice course arrives inside a miniature thatched house with a smoking chimney, spectacle that the produce earns. Blue crab cannelloni with soy-ginger pilpil and galera cream shows a kitchen willing to reach past strict regionalism without abandoning it. The weekday lunch at €55 — snacks, rice, main, dessert, bread, water, and two glasses of wine — is the sharpest entry point and overdelivers at that price. Xerta lost its Michelin star in 2024 after eight consecutive years, reasons undisclosed, but Chef Fran López's Delta-rooted pantry and the kitchen's confidence are unchanged. The drama is real; so is the cooking.
