Atempo earned its star at La Fortalesa de Sant Julià de Ramis in Girona before transferring to Barcelona, where the kitchen lost the recognition in the move and re-earned it in 2022. Iñaki Aldrey still cooks with the precision of a team that had something to prove. The crème-fraîche popsicle with Amur caviar sets the register early — cold, briny, technically exact. Fried oysters in umami-dense mushroom broth are the kind of dish you recount afterward. Caviar threads through even dessert, less a flex than a coherent point of view held across the full 16 courses. The sequencing is deliberate: cocktails near the entrance, a pass through the working kitchen, a tour of the artwork, then the table — and the front-of-house holds it together without stiffness. The space is beautiful and the service impeccable; both are harder simultaneously than they sound.
