Tapas 24 is Carles Abellan's statement that high technique and a basement bar are not mutually exclusive. The man spent fifteen years at elBulli, earned a Michelin star at Comerç 24, and then in 2006 opened this deliberately casual counter on Diputació — strip lights, high stools, a near-permanent queue — to cook tapas that look simple and taste like the product of someone who understands molecular gastronomy but chooses not to show off. The bikini trufado is the calling card: a ham-and-cheese toastie elevated with truffle that originated at elBulli and somehow works better here. The bravas and the bomba are textbook. Twenty years in, the place still fills every service, still draws kitchen professionals on their nights off, and still charges prices that make the quality feel like a favour.
