The steak tartar on smoked brioche with cured egg yolk earns every bit of its reputation: rich, precise, addictive. The tuna with orange, almonds, and cava pearls sounds like a list of ideas but arrives as a coherent whole. Truffled potato parmentier with foie gras is unapologetic comfort done with real craft, and the grilled turbot with Meunière sauce, Jerusalem artichoke cream, and crispy garlic shows the kitchen's range at its most serious. Sommelier Xavi Nolla curates 200-plus bottles — a Star Wine List 'Best New Opening in Spain' — with 35 by the glass, a register that signals a room taking the full meal seriously.
