Familia La Ancha — the Madrid group behind the century-old original and the wildly popular Fismuler — brought their sophisticated tavern formula to Barcelona in 2022, and it landed perfectly. Nino Redruello, Patxi Zumárraga, and Jaime Santianes run a kitchen that makes traditional plates feel essential rather than nostalgic. The tortilla is the kind that starts arguments — loose, barely holding together, with the confidence of a kitchen that knows exactly when to pull it off the heat. Calamares in a light, shattering crust, a whole turbot, char-lined from the grill, presented tableside before being broken down, croquetas alongside crisp pork belly crackling. Callos with chickpeas, lentil stew with Iberian pork knuckle — all of it executed with the quiet confidence of people who know exactly what they're doing. The Fismuler cheesecake makes its inevitable appearance and earns it. The room is open, Mediterranean, built for long group lunches and unhurried celebrations. Nothing here is original. Everything here is exceptional.
