Organic, locally sourced vegetables — every single supplier listed on the menu, which is the kind of transparency most kitchens claim and few actually deliver. The monthly seven-course tasting menu costs €35, a number that borders on the absurd given the work on each plate. Beans, potato, and black trumpet mushrooms with Iberian pork jowl is the sort of dish that captures the thesis: medieval Catalan flavor logic reinterpreted through modern technique, sweet-savory contrasts handled with contemporary precision.
