Opened in 2023 near Plaça Espanya, Isshin filled a niche no one else in the city was touching: wagyu as the centrepiece of ramen. The beef comes from Kochi prefecture on Shikoku — the red-haired akaushi breed, leaner and beefier than the more famous kuroge — and lands on half the bowls in different formats: cooked sous-vide for ten hours, seared on the plancha, as a burger folded into miso broth. The tan tan wagyu is the headline act; the miso wagyu a close second. Ten ramen total, plus classical izakaya starters — edamame, wakame salad, tempura, gyoza — and Ramune soda for novelty. Minimalist room in brick and wood, easy to miss from the street. Not everyone leaves convinced the gimmick earns the price, but when the wagyu is right, the case makes itself.
