Fronda Pasaje hides in a Born passageway on Carrer dels Banys Vells, and you could walk past it a hundred times without noticing — which is part of the pleasure. Inside, Argentine chef Máximo Cabrera runs one of Barcelona's most convincing arguments for plant-based fine dining, working primarily with fire: wood-fired oven, charcoal, slow smoke, the infrastructure of a grill house turned to vegetables. The five-course tasting menu pivots around the market and the season, built on technique that resists novelty for its own sake. The watermelon tiradito, which genuinely reads like red tuna on the tongue, has become a kind of signature. The natural wine list captures Catalan and wider Iberian terroir with the same philosophical seriousness as the kitchen. The room is small, low-lit, candle-softened. Prices are firmly €€€€, which is consistent with the ambition. Even committed carnivores tend to admit, somewhere around dessert, that they'd come back for those alone.
