COYA is a scene as much as a restaurant — lavish Inca-inflected decor, partitions and warm lighting carving the W Hotel's glass-fronted floor into something far more intimate, and DJs running Latin and deep-house sets every evening that escalate Fridays into a proper night out. Start with the guacamole — vivid, properly punchy, worth the order — alongside Padrón peppers in a sesame-miso coating that hits sweet, tangy, and nutty at once. The Arroz Nikkei is the centrepiece: tender Chilean sea bass folded tableside through the rice, paella-service style. The Papitas con Ajo — a bravas riff on new potatoes with grizzled skins and a coriander aioli — keep returning to the table. Churros with dulce de leche close things cleanly. The clientele skews international-wealthy and the volume escalates through the night — both will entertain or irritate depending on temperament. Staff are theatrically skilled. Come for the spectacle, order the rice.
