Shunka is where Matsuhisa planted his flag, and two decades on it's still fully booked most nights. The room is deliberately spare — none of the cedarwood drama of sibling Koy Shunka, and presentation sits a tier below it too. What you get instead is the same sourcing and traditional technique at accessible prices: a nine-dish tasting menu around €65, individual dishes like unagi nigiri and iwashi tataki well under €10 each. The nigiri de toro is the dish every source circles back to. Sushi rice is firm, glistening, vinegar present but controlled. The agedashi dofu has its own following, and the strawberry mochi signals a kitchen that takes pastry seriously. Matsuhisa built this operation before Koy Shunka existed in 2009, and the product quality reflects that founding commitment. Book well ahead.
