Kiosko Universal has been at Parada 691 since 1973, founded by grandfather Benjamín and now run by Borja Domínguez — and the supply chain shows in every detail: prawns from Manel Bosch, mushrooms from Petràs, artichokes from Cal Neguit, all finished at the open grill in front of you. The cigalas hit the plancha fresh and come off it impeccable. The alcachofas fritas sell out; the cap i pota has earned a reputation as the best in the city among people who eat seriously; the salpicón de setas with camagrocs is the kind of dish that exists only when a kitchen is genuinely plugged into its suppliers. La Boqueria is overrun, no reservations are taken, staff assign your seat, and you queue at the cashier first — but Kiosko remains one of the last places inside that market where the surrounding chaos feels worth enduring. Razor clams, scallops, gambas al ajillo with broken fried eggs — a bar that knows exactly what it is, and has never needed to be anything else.
