Brabo in the Eixample is a sanctuary of fire. Chefs Rafa Panatieri and Jorge Sastre — also behind a popular gourmet pizzeria as part of Grupo Sartoria — built the place around one principle: everything cooks over open flame. Meat, fish, vegetables, even desserts go over the fire. The Experiencia de Brabo tasting menu is €105 including water and coffee. The star ingredients are the Friesian T-bone for sharing and a rare French Gascon pig — as black as Ibérico, but raised by very few farmers. House-made sausages round out a menu that is unpretentious and deeply satisfying. The natural-wine list complements the smoke-driven cooking. Service is attentive without being stiff — dishes are recommended with genuine enthusiasm and solid reasoning. Fire cooking is having a moment in Barcelona, and Brabo is one of its best expressions.
