Bornès opened in January 2026 in a Carrer de la Carassa space that spent its first century as a dairy — and the room makes no effort to hide it. Original tiles, stone walls in dark green, and dim lighting run from a lively front bar through an arcaded corridor to a two-level dining room with an open kitchen window. The menu reads like a Catalan regional tour: a miniature clotxa tarraconense, fricandó, suquet de gamba roja, and a picantón cooked fourteen hours at low temperature — the kind of move that separates a kitchen with real intent from one just dressing up comfort food. The rigatoni stuffed with secreto ibérico lands somewhere between macarrons de cardenal and canelons: familiar enough to work, distinct enough to matter. Cocktails lean hard into Catalan identity, and a bar list backs more than a hundred mostly Catalan wine labels. Service runs close and unpretentious — two bars make the room as good for afterwork drinks as for a full dinner.
