Melón con jamón — transparent focaccia over liquid melon with Ibérico ham. Carpaccio of Palamós prawns with pa amb tomàquet textures, tomato-infused coral bread, black olives, and tomato ice cream. White asparagus en papillote wrapped around cod with wild mushroom and kumquat broth. Brined egg yolk with caviar and bottarga over potato mash. Mar i muntanya suquet — chicken wing, langoustine, alioli, almond-thickened broth.
