Two tasting-menu formats — typically around 14 or 21 courses Creative Catalan haute cuisine, technique-forward

Chinese brioche with grilled eel, fresh wasabi, and aioli — smoked tableside. Sweetcorn taco with foie gras and mole ice cream. Lulo ceviche — Colombian lulo fruit with oyster and pisco sour. Pigeon two ways — marinated and grilled pichón with carrot in romesco, hummus, escabeche, coffee, spice, and lavender. Roasted lobster with baby radishes and coral emulsion.
