Tlaxcal sits on Carrer del Comerç in El Born and does something rare: serves traditional Mexican cooking that earns respect from Barcelona's most serious Mexican-trained chefs — Paco Méndez of Michelin-starred Come has publicly endorsed it, which tells you what you need to know. The taco de lengua is tender and deeply seasoned, the aguachile has genuine heat and acidity, and the chilaquiles arrive drowned in the kind of salsa verde that separates real kitchens from tourist imitations. The tlaxcales themselves — the pre-Hispanic corn cakes that give the place its name — root the menu in a tradition older than most of what passes for Mexican food in Europe. Tres leches for dessert, properly soaked, not cloying. The lunch menu is a genuine bargain, the room is bright and informal, and the clientele mixes Born locals with Mexicans who know exactly what they're looking for.
