Book weeks ahead or don't bother showing up — Sips operates on a strict reservation system and a line forms regardless. Inside, the room does what it promises: no bar separating you from the action, bartenders fully visible, every step on display. The bergamot Negroni lands balanced without dilution — a deceptively difficult thing to pull off — and a drink of lychee, rhubarb, lemongrass, and bone-dry fino sherry sounds like a stunt until you taste it and realise balance is the whole point. Cocktails run €10–12, genuinely accessible for this level of execution. For full commitment, Esencia — the bar within the bar — runs a liquid tasting menu at €75 for 10 sips or €97 for 15. The smart-casual dress code is enforced without apology. Come with a plan, come on time, and surrender the evening to it.
