Galileo operates in the overlap between cocktail bar and restaurant on Carrer de Galileu in Les Corts, and unlike most spots that stretch to both ends it actually holds up as a dinner reservation. The cocktail programme is the origin and still the primary draw — classically trained, ingredient-focused, with a seasonal list that runs parallel to the kitchen. The food is Mediterranean sharing plates designed to complement the drinks: tuna tartare, grilled vegetables, steak tartare, short-rib preparations, the kind of menu that doesn't fight with negronis or highballs. The room is sophisticated without stiffness and draws couples and small groups; the later the evening, the more the bar asserts itself over the kitchen, which is worth knowing. Come early if you want the dining experience, later if you want the bar experience — both are good, but they are different rooms in the same space.
