Santiago Sánchez has built something genuinely singular on Muntaner — a restaurant that refuses to be pinned to any single Latin American flag. His tasting menus (six courses at €55, nine at €95) weave Indigenous recipes with African and colonial Spanish influences into dishes that feel both ancient and startlingly contemporary. The chicken sancocho layers Latin American vegetables with sofrito and yuca; the pescado a la talla arrives in banana leaf, perfumed with corn and native spices. Flavors run full-throttle without ever losing elegance. An all-Catalan wine list and house-made prebiotic drinks round out a dining room that doubles as cultural statement — named for the historic Cartagena neighborhood that housed formerly enslaved Africans. Nothing else like it in Barcelona.
