Edward White started Fast Eddie's selling twenty fried chicken burgers a week out of his home during lockdown — the jump to Carders has done nothing to inflate his ambitions, and that's the point. The smash cheeseburger uses beef sourced daily from Mercat de Santa Caterina, hit hard on the flat-top for a properly caramelized crust; no refrigerators means no hedging on freshness. The fried chicken sandwich holds its own, the cauliflower-and-onion pakora vegetarian option is genuinely worth ordering, and the hake burger — Fridays only — keeps regulars on a schedule. Hand-cut fries, house sauces made every morning. The room is small and industrial, the queue outside is daily and real, the crowd an honest mix of expats, locals, and tourists who've been tipped off.
