Universally known as La Xampanyeria, Can Paixano has been a Barceloneta institution since 1969, when it opened as a tavern for the fishermen working the port a few blocks away. The proposition has barely changed: standing room only, house cava at about one euro the glass, entrepans that never break 4€. A bottle of the exclusive Berenguer Ramon sparkling wine runs 4,45€ before five in the afternoon. The food plays second fiddle to the ritual — botifarra a la brasa, xoriço, foie gras with bacon, pernil, cecina, all honest, none fancy. Cash only. Opens at nine in the morning. Closed Sundays. Between seven and ten-thirty the room becomes organised chaos: loud, packed, joyful, essentially unchanged since fishermen drank here before their shifts. You don't come for a quiet sopar. You come for cava at a price that has no equivalent anywhere else in Barcelona, and for a standing-bar energy most European cities have long since sanitised away.
